FOOD AND BEVERAGE MANAGER
• To organize work of F&B department, to plan working process, to create menus and wine lists, to order materials;
• To manage and control working process, to observe HACCP regulations;
• To ensure daily success of F&B outlets, quality of food, service and storage, efficient usage of resources;
• To coordinate the development, interpretation and implementation of hotel policies, operating procedures and training programs, manuals, directives, menus, work schedules, rules and regulations for the food and beverage staff ;
• To assist in maintaining up-to-date records on food and beverage staff personnel attendance, appearance, standards, work and vacation schedules, labor costs, payroll, absenteeism, turnover and disciplinary action;
• To maintain current prices and approved purveyors listed based on quality, service and cost of all related food and beverage items for requisitioning purposes, store inventories, cost control procedures and forecasts.
• To instruct subordinate staff, to give job tasks based on staff qualification;
• Constantly seek out ways to enhance service and increase volumes and profit through effective, innovative implementation of the F&B strategies
• To prepare production process , technological, pricing and payment documentation;
• To strive for turnover increase and company' s common goal achievement.
• Professional education according to the position;
• Minimum 5 years of experience as F&B manager, preferably at one or more world leading hotel properties (experience in Scandinavian, Baltic and CIS countries will be considered as advantage)
• Ability to plan and control production and service process, to efficiently resolve problems, ensuring required quality;
• An efficient team-player and good communicator;
• Ability to organize accounting and reporting of production process;
• Stress resistance and ability to resolve conflicts;
• Good PC knowledge;
• Good knowledge of English and Latvian (knowledge of Russian will considered as advantage);
• High sense of responsibility, analytical abilities.
